Instant Pot Baby Back Ribs

Just so you know, we absolutely love ribs.  We spent a couple years tweaking our technique and even coming up with our own dry rub.  We’d rub it down, slow cook in a crockpot for 10 hours, then sauce them and throw them on the Traeger.  Well, my husband sauces and grills them.  I, on the other hand, like my meat pure.  Rub, cook, eat.  That’s my preferred method.  Because of the long cook time, we’d only do ribs on weekends.  The Instant Pot was a total game changer.  We had them tonight.  Took less than an hour and was just as good.  It did take a couple tries to figure out how to get the right texture.  Once they were too chewy, another time they were zapped of any texture and were basically mush.  Tonight, we nailed it.

Ingredients
1-2 racks of baby back ribs, cut in half
1/2 C homemade rib rub
1 C barbeque sauce (we like Two Fat Guys Smoky BBQ Sauce)
1 C water

Directions
Put 1 cup of water into your electric pressure cooker.  Add the trivet.  Rub down all sides of each rib rack with dry rub.  Put ribs in pressure cooker, standing upright.  Close pressure cooker and set to high pressure for 23 minutes.  Remove ribs and serve, or sauce them up and put them under the broiler or over the grill until sauce is caramelized.

On a side note, I only did one rack tonight, so I popped a couple whole potatoes into the Instant Pot along with the ribs.  Same cook time and they were perfectly soft, just like baked potatoes.
