Of all the recipes I’ve tried in the Instant Pot, this one for Pork Loin Chops in HK Onion Sauce was hands-down the richest and most flavorful. And it was remarkably easy. The only two fresh ingredients are the pork chops and the onion, everything else came right out of the pantry.

It’s definitely an Asian flavor, the HK in the title stands for Hong Kong. The dish is so full of deep umami flavor, I kept craving the next bite and the next. I honestly never thought about using Worcestershire sauce or balsamic vinegar in a Chinese dish, but the flavor brings back some good childhood memories of hearty meat dishes.
I did use bone-in pork chops because that’s what I had on hand, and ground black pepper rather than ground white pepper, but those were the only two deviations I made from the original recipe. I think I might go a minute less the next time around just to see what difference that would make, but that would be the only tweak. Definitely a keeper.
