Do you have a toddler who’s a picky eater? I do. I also have a toddler that is on the run constantly, so by the end of the day, I’m lucky if I can string together two anythings. Luckily, this one dish touches three food groups and goes from pantry staples to table in about 10 minutes total. It’ll take you longer to read through this recipe than it will to cook.
Ingredients
~2 C of egg noodles
1 C of water (enough to just barely cover the noodles)
2 T I Can’t Believe It’s Not Butter (or butter version of your choice)
1 C shredded cheese
deli meat torn up into bite-sized bits (I use the Oscar Mayer Oven Roasted Turkey, but anything will work)
1/4 C frozen corn
Directions
Add noodles to Instant Pot insert. Add enough water to just barely cover the noodles. It’s okay if there are a few non-submerged ends. Select Manual, High Pressure, and Adjust to 5 minutes. When the Instant Pot beeps, do a slow release. To do a slow release, lightly raise the release valve using the handle of a wooden spoon to allow the pressure to release more slowly. You need to do this to avoid a noodle scum explosion. If you added the right amount of water, you will not need to strain the noodles. The noodles will have perfectly absorbed the cooking liquid. If there’s excess liquid, strain away.
To the noodles, add the butter and cheese and stir. Then stir in the deli meat and frozen corn. The heat from the noodles will defrost the corn and warm up the deli meat. Finally, catch the toddler, strap her in and hand her an Elsa spoon. Good luck.
